Are the kids bugging you for cupcakes?
If you have a metal four hole muffin pan, the microwave is a fantastic way to make them in a few minutes.
1 box cake mix
Follow the directions on the box to make the batter - you can omit the oil they might ask you to add.
Line the holes with paper muffin cups, spoon in the mixture. Microwave on high for 3 minutes.
As with any microwave recipe, you may need to adjust the settings slightly. I use a 1000W microwave.
Of course, the muffins / cupcakes don't brown. Sofia finds pure white muffins kind of creepy. As well, microwaving without a muffin tray doesn't quite work, since the paper cupcake / muffin cups don't really hold up that well. On the other hand, if you don't mind funky looking, non-browned cupcakes / muffins, go right ahead.

Yeah, I can share some veggie recipes. I don't really have any fish recipes - the fish (Mackerel) I prepared last night didn't turn out that well.
Metal reflects microwaves, so any where there is metal, the microwaves bounce off. With a metal upcake cupcake pan, the cakes bake from the top down - since the top is the only part that absorbs the microwaves.
If I used a glass or plastic of silcone rubber tray, the microwaves would penetrate from the sides as well.
Baking in a microwave is tricky because a few seconds one way of the other makes a BIG differnce (burnt or not done).
The other problem is that is doesn't brown. So the colour looks very uncooked.
The first tiem I ever saw someone bake in a microwave was a Chinese friend. She baked a cake in a glass casserole dish. It only took a few minutes - so we had fresh cake after dinner.
